Gloomy winter weather can be the inspiration behind some fabulous meals (soups, chilis, and stews, anyone?), but it can also be to blame for major food ruts. If you’re getting a little bored of your eats lately, here are five foods you’re probably not eating that you should throw on your plate right now!
Coconut
Whether it’s coconut milk, oil, cream, or the actually thing, coconut is satisfying, versatile, and a little exotic. It can go savory (add curry powder to coconut milk for a delicious Indian or Thai-style sauce) or sweet (add coconut oil or milk to your morning smoothie with fruit and nut butter). I devoted a whole week on my blog to coconut called “You Go,  Coco!” Yup, I went coconuts.
Seaweed
I’m absolutely loving Trader Joe’s Roasted Seaweed Snacks. It’s got all the qualities a good snack should have: It’s savory, a little salty, and crispy. At 60 calories and 1g carbs per package, it’s also a snack I don’t feel bad about eating ALL THE TIME. Don’t have a TJs near you? First of all, I’m sorry for your loss. Second of all, never fear — You can order these guys online! For other forms of seaweed, try kelp noodles or seaweed salad
Goat cheese
Ah, goat cheese. So creamy, so delicious. And it’s also easier on the stomach, especially if you’re sensitive to dairy! I love Trader Joe’s Goat Cheese Medallions, or raw goat’s cheddar from Whole Foods or my local market. Sprinkle goat cheese on your veggies, add it a sauce for a more complex and creamy taste, or honestly… just eat it plain!
Shallots
My aunt put it best the other day when she said, “Everything just tastes better with shallots.” It’s so true! Halfway between onion and garlic, shallots give things that unmistakable “I spent a lot of time cooking this” flavor. I love them sauteed with green beans, but you can literally add them to any dish that calls for onion or garlic.
Lima beans
I love the wide, flat texture of these beans. I feel like they get overlooked a lot in favor of more popular beans like kidney, black, garbanzo, etc.  Saute lima beans with some shallots (and bacon if you really want to be ballsy!), salt, and pepper, and you’ve got a hearty and unique side or main dish that takes 10 minutes to put together.
